These drives range from an enjoyable stroll to being worthy of a rally stage. The list will start with roads I have personally driven, but will be expanded to include community suggestions as the page evolves.

Remember, always drive within your ability, vehicles capability, and the limitations of visibility and environment. To quote Philip DeFranco, "Don't be stupid, stupid."
Bible Creek
This area is used as a hillclimb event every year and has several good twisty roads near by. If you feel the need to drive it fast, your best bet is probably to register with Willamette Motor Club for their annual race, that way someone with a fire extinguisher will be able to put out your smoldering remains.
Little Nestucca River Rd
This road is a optional route to the cost that boasts some nice cornering, scenery, and chances to pickup the pace... some of the year. Traffic can be an issue at times, but because there are alternate routes with less corners and higher speeds, most vacationers choose to avoid it, leaving it for the faster, more nimble traffic.
Maryhill
This one few get to enjoy. This road is closed to the public most of the year, but is opened up for driving events and cruises periodically. Willamette Motor Club has a hillclimb event here every year if you just have to push your skill to its limit.

Note: Google won't let me highlight this one because it is not a public road, so you will have to use some deductive reasoning.
Table Rock Wilderness & Maple Grove Road
This drive has options for gravel or moderately maintained pavement. It can be enjoyable for sight seeing or shaking down a cars suspension or brake setup. There are a lot of corners, options to the route, and great scenery once you are in the Table Rock Wilderness, as well as places to camp and hike.
Highway 34
Many Oregonians will know of the old Highway 34 route between Corvallis and Waldport. The Eastern section has an exceptionally twisty bit and passes through some great scenery as it heads West to the coast. Most of the road becomes more boring as you approach Waldport, but why stop when so close to Highway 101?
Cave Junction to Oregon Caves
This one is almost theoretical due to traffic, stupid, and stuff on the road. If you can do it in the off season or close the road and drive it as a closed course, it would be a very complex route as you approach the caves. Should the traffic gods be in your favor, the animal gods be taking a nap, and the department of transportation have recently worked on the road, it would be amazing.
Marys Peak
This road has claimed many a tire, and can have some really poor surface conditions, but we have had great fun on both motorcycles and in cars driving this road. Hopefully the traffic gods are in your favor.
